FOBAB - A Celebration of Barrel Aged Beers

#FOBAB is the nation's foremost festival of barrel-aged beers sponsored by the Illinois Craft Brewers Guild. It's the ultimate haven for wood-aged beer in the heart of Chicago. Brewing with wood is like playing with fire - you throw consistency out the window in lieu for complexity and flavor. 

How did beer and wood come together? For hundreds of years, beer was fermented in wood, aged in wood, shipped in wood, and served from wood. Due to contamination, the usage of wood was enthusiastically abandoned with the advent of metal kegs, fermenters, and storage tanks. As the industry blossomed, brewers have began once again experimenting with aging beers inside wood barrels. Most popular in America is the bourbon barrel but this notion has evolved into any types one can imagine - whiskey rye, rum, wine, gin, etc.
